Shrimp Crostini perfection

A long, long time ago I was friends with a wonderful man named Charlie. Charlie owned Luciano’s Italian Restaurant on Alameda. It’s since been sold to new owners. Throughout, I had the absolute best time getting to explore the restaurant behind the scenes. Charlie would often laugh at my choice of favorite Italian meal. I was very predictable choosing the chicken parmesan every time I ate Italian. However, he soon made a rule that I couldn’t order the same thing twice. I began exploring the menu and trying things that were out of my comfort zone, things like veal and…

Chef Showdown draws local foodies

Upon entering, guests were immediately smacked in the face by a wall of aroma from the numerous tables lined up around the edge of the room. Several local restaurants were presenting sample sizes of their signature dishes, all competing for the title of Peoples Choice at Corpus Christi’s first Chef Showdown. Foodies who attended the event, which was originally planned for 2017 but had to be delayed due to Hurricane Harvey, were treated to dishes including decadent Mexican Chocolate fudge in a miniature waffle cone, Anything Goes Stew made with anything and everything you find in a pantry, and Gnocchi…

From food to flair…

International students celebrate, share culture in Harvin Center Students representing cultures from across the globe came together in the Harvin Center for the annual International Day of Celebration. Some of the many countries represented were Greece, Taiwan, Brazil and the Ukraine. The March 28 event included informational tables displaying the variety of foods, traditions and artifacts specific to each country’s culture. The Harvin Center was loud and lively with drum sounds produced by those representing Brazil. Also included in the event was a traditional Brazilian martial arts dance called Capoeira and a Samba. Many of the tables offered free food…

Center for Early Learning’s goal: delicious, nutritious

The Center for Early Learning at Del Mar College is part of a new program to help the children eat delicious yet healthy food. The college has announced a sponsorship of the Child and Adult Care Food Program through the Texas Department of Agriculture’s Food and Nutrition Division. Melinda Eldrige, director of the CEL, has helped to make sure the criteria is met to be able to provide the children the meals. “The meal patterns are very particular as far as what we have to meet,” she said. Eldrige stated that it balances that they are focused more on whole…

No eating with hands allowed at this meal

Del Mar Career Development Center holds luncheon to teach manners Not too often does an opportunity arise to hone your professional dining etiquette skills — in fact, it only happens twice every semester. Del Mar College’s Career Development Center hosted a business etiquette luncheon on Feb. 28 on East Campus and a dinner on March 1 at West Campus to inform students about proper dining techniques needed for possible future interviews. “It’s an opportunity for students to come in and learn about luncheon business etiquette for dining interviews with potential employers,” said Darcy Letson, an architecture major who works in…

Eggplant a welcome surprise in restaurant’s Pad Thai dish

Julieta Hernandez jhernandez@foghornnews.com Bamboo Garden is one of Corpus Christi’s signature Asian food spots. Located conveniently on Airline Road, the restaurant specializes in Chinese and Vietnamese dishes and has a wide variety of classic and complex dishes to choose from — including vegetarian and vegan options. Walking in with my colleague, we were greeted immediately. Bamboo Garden has been open In Promenade Plaza for several years, so the restaurant often is pretty lively and bustling with regulars. However, the restaurant is big enough that we were able to be seated and enjoy our meal in a secluded booth with no…

This year, make it a vegan wonderland

Julieta Hernandez jhernandez@foghornnews.com Herbivore Holiday Recipes Ah, the holidays. No matter which ones you celebrate, there’s only one thing on everyone’s mind: the homemade, traditional meals. One thing that’s not — the herbivores. With a vegan or vegetarian at the dinner table, the turducken or beef tamales may be a pass. “My aunt will be like, ‘What’s that? That’s not food! Where’s the meat?’” said Del Mar student Cody Benavides, who is entering a third holiday season as a vegan. With veganism and vegetarianism growing specifically among the younger generation, more questions are being raised along the lines of: What…

Old fashioned country food at a great price

Jonathan Garcia jgarcia@foghornnews.com When I arrived at Andy’s Kitchen on the southside, the place looked a bit small. I wondered how this little building could seat many people. When I stepped inside, I saw it wasn’t as small as I made it out to be. It had a nice old country-style feel. I went for breakfast and was immediately seated by a nice waitress. I ordered some coffee while I browsed what they had to eat, of which there was no shortage. They serve breakfast all day and they have your regular country breakfast as well as Mexican entrees. I…

DMC Pepsi sign deal

Students may notice a few changes in Campus Dining this semester, especially the new fountain drink machines. The machines, as well as the new decor, are part of a more than half-million-dollar deal Del Mar College signed with Pepsi Cola Co. and Sunrise Vending. The deal runs through April 30, 2019. David Dávila, director of purchasing for DMC, said deal differs from previous ones by having more exclusivity. “We looked at all the offers we had and found that Pepsi would be the most beneficial for the campus,” Dávila said. The money from the deal will go toward a variety…

How small changes can help you achieve a healthier lifestyle

Nomaan Khan nkhan@foghornnews.com While college students aren’t typically nutrition gurus, they can still implement simple changes into their diets and routines that will enhance their energy, focus and overall well-being. For many, the health boost may be just what they need after the week of excess known as spring break. Israel Villanueva, head culinary instructor at Del Mar College, said diet can affect grades. “You’ve got to eat fresh and healthy if you want to succeed in school,” Villanueva said. “It’s vital you do all you can to improve and educate yourself as a student. Your education is what will…
